Yummy roasted vegetables and chicken thighs

Rosa and I had yummy roasted vegetables and chicken thighs last night!

We used potatoes, sweet potatoes, red onions, carrots, radishes (which was a first for us, but important to try because we are planting them in our garden), golden beets, romanesco cauliflower, and asparagus. Seasoning included grated ginger, crushed garlic, salt and pepper, various herbs, chipotle, red pepper flakes, and paprika. Lots of olive oil of course. And lots of leftovers! Sadly we are still not ready to have you over for dinner but maybe next time? Eat the rainbow!
